Simple Vegetable Fried Rice
3 cups cooked brown rice
1 medium sweet onion
2 cloves garlic, crushed, chopped
2 carrots
2 stalks of celery
1/2 cup of frozen peas
1/2 cup of cherry tomatoes
2 eggs
1/4 cup of sweet and sour sauce ( i like this kind)
1/4 cup Sriracha sauce
1/2 cup fresh cilantro, roughly chopped
Follow instructions for rice cooking (can use brown or white) once cooked, set aside. In a medium skillet sautee vegetables together until cooked. Add 1/2 of the soy sauce and cilantro, salt and pepper if needed. Scrambled the eggs with the cooked vegetables in the same skillet. Next, toss the cooked ingredients together with the rice. Add the Sriracha, sweet and sour sauce and remaining soy sauce and cilantro to the mixture. Cook over medium heat, tossing together for 1-2 minutes and serve!

Hot and (extra) Spicy Soup
1 medium sweet onion, roughly chopped
2 cloves garlic, crushed, finely chopped
2 green onions, chopped
1 jalapeno, seeds removed, finely diced
2 cups shitake mushrooms, stems removed and sliced
2 stalks of celery, chopped
1 cup spinach (optional)
1 cup of beansprouts
1 cup fresh cilantro, roughly chopped
2 tablespoons crushed red pepper flakes
1/4 cup of Sriracha sauce
1/4 of soy sauce
1/2 lime
3 cubes of vegetable bouillon, can use vegetable broth if prefered.

In a medium soup pot, sautee onions (both green and sweet) and garlic until cooked adding a pinch of salt and the crushed pepper flakes. Add 7 cups of water with 3 vegetable bouillon cubes (adjust accordingly to taste) and bring to a boil. I use a little bit more water than required due to the sodium from the soy sauce. Add in the cilantro and squeeze half of lime into the soup along with the Sriracha and soy sauce. Let the soup simmer for about 20 minutes on a low heat, allowing the flavors to come together. Add in the vegetables and bring back up to a boil for 2 minutes. At the last minute, add the beansprouts and serve. **Optional- I like to add frozen vegetable potstickers to the soup for a heartier meal. You can drop them in when you put the vegetables in and cook them all together.

Yummm~ Thanks for reminding me I have been wanting to make my healthy version of chicken fried rice for the blog! Somehow it slipped my mind!! This looks really tasty.
