Friday Night Pizza

Nothing is better on a cold, rainy night than some homemade comfort food. My go to comfort food is pizza. I keep pre-made dough on hand in the fridge or freezer so I can easily make my own.  I love a simple margherita pizza with fresh mozzarella, but I decided to add some extra ingredients for a twist.

-1 package of dough

-1 1/2 cups marinara sauce

-1 package of fresh mozzarella (the ball works best to slice)

-4 slices of prosciutto

-1 cup arugula

-1/4 cup fresh basil leaves, chopped

-1/2 cup shredded Asiago cheese

Set the oven to the temperature according to the dough package (usually 350-375º).

Dust your kitchen counter with flour and roll out the dough, working out all the bubbles.  Lay dough on a round baking sheet or pizza stone. Add the marinara sauce, the jarred kind is fine. Next, thinly slice the mozzarella ball and place the cheese over the sauce. Add half of the amount of the Asiago cheese to the mozzarella and bake according to instructions. Take the pizza out about 5 minutes before it’s done and set aside.  Rough chop the arugula and shred the prosciutto. Place the ingredients on the pizza along with the rest of the Asiago cheese. Add fresh, chopped basil and place back in the oven to bake for the remaining 5 minutes.  Pop open a bottle of your favorite wine and enjoy!

**For the packaged dough and marinara sauce Trader Joe’s works well. I like the taste of both products and they are very reasonably priced.
